A most frequent fault in the use of the filtration method is the failure to understand the fine degree of grinding necessary to the best results. When the grind is not sufficiently fine the extraction is, of course, weak. A fine grind (like fine cornmeal) is essential. It does not retard the flow if the filter is of right dimensions. A powdered grind (like flour) is so fine that it is apt to “mat” itself into a resisting floor.

Many users of the filtration method pour the liquid through more than once. This gains some added color, but adds undesirable element, depreciates flavor and is especially inadvisable when the grind is sufficiently fine. _One pouring_ only is recommended for the best results.

The chinaware, or glazed earthenware pot, sometimes called theFrench drip pot, with a chinaware or earthenware sieve container for the grounds at the top through which the water is poured, being free of all metal, is inviting in purity and in hygienic merit. Together with the filter bag, it is subject to the above remarks on dimensions. A chinaware sieve cannot be made as fine as a metal sieve and cannot of course hold very fine granulation as can cotton cloth. More coffee for a given strength is, therefore, required. The upper container should be wide enough, for a given quantity of coffee, as to allow an unretarded flow, and the more openings the strainer contains the better.

In any drip, filtration or percolating method the stirring of the grounds causes an over-contact of water and coffee and results in an overdrawn liquor of injured flavor. If the water does not pass through the grounds readily, the fault is as above indicated and cannot be corrected by stirring or agitation. Many complaints of bitter taste are traced to this error in the use of the filtration method.

It is not necessary to pour on the water in driblets. The water may be poured slowly, but the grounds should be kept well covered. The weight of the water helps the flow downward through the grounds. Care should be taken to keep up the temperature of the water. Set the kettle back on the stove when not pouring. If the water measured, use a small heated vessel, which fill and empty quickly without allowing the water to cool.

When a friend mentioned to me that they had a new coffee maker I naturally assumed there would be a shiny new coffee pot and heater unit sitting on the kitchen counter top. But that wasn’t the event at all. My friend had been introduced to a new ‘Barista’ whose new espresso coffee recipes were making a big stir with the local office crowd.

My knowledge of such a profession was sadly lacking but I became very impressed with the skill, knowledge of beans and roasts, and the deft handling of a large variety of complex and subtle coffee drink recipes. Indeed, the whole art of making coffee requires an array of skills, an advanced knowledge of product and months of practice and that was something that was very impressive.

The actual word ‘Barista’ is really Italian for bartender but in the English language it has come to mean someone who prepares espresso based coffee drinks, although in North America generally the term has been used for any one employed in a coffee house situation. I like the comparison with the word for wine expert which is ‘Sommelier’ as a ‘Barista’ must also be highly trained in all aspects of coffee, roasting, blending and the use of espresso equipment. Goodness knows how many different types of coffee there are in the world or even more relevant, how many different blends!

A coffee maker can be a finely educated ‘athlete’ when it comes to mixing exotic espresso drinks and there are competitive events around the globe where a barista can show his or her skills, but it takes flair, training and much practice to be considered for such performances. Monte Carlo was the site of the first World Barista Championship and that was in 2000 and it quickly caught on. Almost ten years later, the World Championships are held in a different country each year and host the winners of the various national titles. Judges assess the drink made and the person who made it. The score includes not only taste but presentation and speed, as preparation is against the clock with only fifteen minutes being allowed for each Baristas performance.

Every entrant must use the espresso machine provided but many bring a whole grab-bag of exotic ingredients. Syrups, sprinkles, fruits, ground spices and even their own blended coffee roasts. In fact they must prepare four signature drinks, four different cappuccinos and four espressos while four judges sample, taste and smell: all with foam art and graphics, to complete the presentation. Fifteen minutes can mean a whole lot!

Winners have made coffee drinks with cane sugar, pepper-gel, lavender, white pepper, infused sage leaves, honey and dark chocolate squares. The 2004 World Champion from Canada named Sammy Piccolo, used raw sugar, egg yolks, curry, bittersweet chocolate and milk with his specially blended coffee roast and called his winning creation ‘Insieme’.

These competitions require dedication and hard training, just like any athlete working towards a World Championship and this puts a whole new perspective on the phrase ‘Coffee Maker’, so when you are considering your next cup of espresso, think about some new recipes and some new flavorings and maybe you could be our next representative.

Single Serve Coffee Makers – The Modern Household Coffee Maker

Why buy a single serve coffee maker? The reasons are numerous but I will try and explain in this article to convince you. I have owned a Keurig single serve coffee maker for over a year now but prior to that I tried several different 10 cup makers trying to solve little annoying issues that we all experience. I have tried every top retail brand like Cuissanart, Krupp’s and Braun along with old-time makers like Mr Coffee. None of them kept my amusement for very long. I then tried a very expensive maker for coffee connoisseurs and spent over $300 for it and it ceased after a year and it still had the same problems like:

 1. Coffee flavor changed after sitting in the pot
 2. Did not hold temperature for long
 3. Waste of coffee
 4. Same flavor for every cup

Comparing Single serve makers and standard Carafe models is a bit like compaing apples and oranges. Everything from taste to overall brewing experience is totally different. I have to say that when I first experienced putting the little cup in the coffee holder to pressing my first start button I was in love. It was so easy and frankly fun!

I am still debating whether or not the one cup coffee kcups are more expensive because I seemed to waste so much using a carafe system so It is really hard to examine the reality of the claim that the coffee per cup is more expensive with a one cup system. If there was no waste using a standard maker then I would obviously agree but I never was any good at making a good cup of coffee using a 4 cup measurement. The value in a one cup system is as following:

 1. Every cup is brewed at same temperature so you get a great cup consistently
 2. You can have a different flavor each cup
 3. Fast, have a hot fresh cup in less than 30 seconds
 4. No pot or carafe to constantly dish wash
 5. No filters to buy

Those are some of the main reasons but honestly the coffee tastes great. I have also heard that you can’t get a strong cup of coffee out of the pods or the kcups but my experience has been that the coffee is really rich and dark. So many varieties remind me of a cup straight from Starbucks. This has been the best new invention and modernization I’ve seen in years. Definitely the best new gadget I have purchased in a long time. Get up to date and buy a Keurig maker or ask for one for Christmas. You’re going to love it!
